Under the Sea.....

Last night we celebrated Mackaylan's birthday with family and some of our friends that we consider family! Mackaylan chose the theme- The Little Mermaid- and I tried my best to make it as thematic as possible.


For dinner we enjoyed a Low Country Boil complete with shrimp and sausage. We always eat that in the summer when we are at the beach so I thought it would be a perfect meal to serve to a large crowd- and it kept with the theme!

Speaking of cake.... take a look at this creation. My loving, creative, fun, Martha-Stewart-type-of-friend Dawn whipped this up. Isn't she beautiful? Mackaylan was in awe (as were the rest of the kids and adults at the party!)
This was definitely a party to remember! Happy early Birthday, Mackaylan! :)

Menu Plan Monday

Since this week is Spring Break, I have no excuse for not putting dinner on the table each night. Between work, school, church, and life, I have not cooked very much this school year. I am hoping if I can make out a plan this week and stick to it, I will realize how helpful this process is and will continue once I return back to work.

Monday- Chicken & Cheese Crescent Chimichangas
Tuesday- Low Country Boil w/ dinner rolls
Wednesday- Pulled Pork Sandwiches w/ chips
Thursday- Baked Buffalo Chicken Salad
Friday- Rehersal Dinner for my cousin's wedding
Saturday- Wedding!
Sunday- Easter

Saturday we spent the afternoon in Morganton, NC for Mickey's 4th race of the season. He didn't finish as well as he would have liked, but enjoyed the track and had a blast nonetheless! Here are a few pics from our day......

Spring Break

It is officially the start of Spring Break! I am so excited about having a full week off from work and school. This week I am going on a week-long "staycation!" We will be catching up on some much needed R&R with family and friends (with a little spring cleaning mixed in every now and then.) This afternoon Mackaylan and I are going to create a calendar of all of the fun things we want to do over the next few days. I promise to post throughout the week to let you know what all we are up to!

Project Life- Week 7

I have been a little slack lately with Project Life. I have found this task to be very easy when we have a lot going on. However, on normal weeks, it is hard for me to remember to take a picture. Ironic? I think so too, especially since the whole premise of Project Life is to capture pictures of everyday life. Having been accused before of not being very good with follow through, I proudly present Project Life- Week 7.....

Tackle it Tuesday

For those of you who follow my blog, or know me IRL (in real life) then you know that I have been dieting since the beginning of 2010. My weightloss has been steady and I am pleased with my progress so far. However, the one component missing has been exercise....until today! After work, I slipped on my tennis shoes, grabbed my iPod (have I told you how much I love that thing?) and headed to the local walking trail. I walked for 30 minutes while jamming to the tunes of Danny Gokey, Lady Antebellum, Mary J. Blige, and Beyonce. Quite a combination, huh?! I would like to get back into the routine of walking at least 3x a week on a regular basis. Until then, I will take it a day at a time!

Exercise. I tackled it! What about you?

Gearing Up For Spring!

Sunday afternoon Mackaylan and I spent some time going through boxes of hand-me-downs. The sun was shining and the forecast of nearly 70 degree weather gave us a little dose of spring fever. It was time to pack up some of her winter attire, and take inventory of what we had, and needed, for spring. Mackaylan enjoyed putting on a fashion show, and I definitely took advantage of her cooperation. As you can see from the photos below, we hit the jackpot!!!! She has more than enough clothes for spring and summer. We are so lucky to have friends like the Sparks that pass along their gently used clothes. It is such a blessing! Now, if only I could get Alyssa to come and organize them into the drawers and closet! :)
